A little about yeast data:

Efficiency - Typically stated as efficiency, this parameter gives the percentage of sugars or gravities you can expect to ferment into alcohol. High efficiency yeast will generally ferment more sugars and leave a drier, less malty finish.
Temperature range - This is the recommended temperature range for fermentation. Fermenting within this range will result in the best performance in terms of fermentation and also flavour. Fermentation too hot can result in poor flavour, including esters and fusel alcohols, while fermentation too cold can result in poor yeast performance.
Flocculation - A measure of how quickly the yeast settles after fermentation. Yeast with high flocculation will generally mature and settle faster, while yeast with low flocculation may require a longer maturation period.
Alcohol tolerance - A measure of how much alcohol by volume the yeast can tolerate. Many brewer's yeasts have a low alcohol tolerance in the 5-10% range, making them unsuitable for very high gravity beers, so you should pay attention to this parameter if you are brewing a high gravity beverage.
